Beef knuckle bone help!

I just picked up a beef knuckle bone from the butcher ( thanks to some of ht efellow forum members..) I hav ea few concerns though.. he took a huge piece and cut it in two. It its gigantic. I want to know if I should cut some of the meat off.. there is so much and shes never ate raw in her whole life. Also i saw something hard like a little bone so i just cut it off.. shes a little 35 pound dog and its a huge bone.. i dont know if i should just throw it out or not.

edit: whats the standard protocol when you recieve one of these..

No, don't throw it out. Let her have it under supervision for an hour or two then take it away, rinse it off and put it in a zip lock bag, repeat the procedure tomorrow night and for the next few days until the bone is bare (you will see, they will get tired of it)--I had a 35 lb westie who could chew anything--don't worry---just supervise.

if the bones have alot of meat/gristle on them and my dogs haven't had them for a while, i only let them have them for about 15 min for the first few days till the meaty stuff is gone......otherwise, you may end up w/ upset tummy and bouts of the "squirts"......i keep them in the freezer in between chews, so that they are a little tougher for the chewing.....

if there's not much of the "meaty" stuff or when it is (almost) gone, then i let them have them completely.....
