The minimum ring size is 5000 square feet for Novice, 6500 square feet for open, and 8000 square feet for excellent; 100x120' is mentioned as an 'ideal size'. (Chapter 4, Section 1 of the AKC Agility Trial Regulations, which are online at AKC.org)
Not sure about other venues, but I suspect the ring dimensions are pretty similar. The only exception is going to be TDAA (Teacup Dog Agility Association) which has a maximum height of 17" for dogs competing in their organization, I suspect they have a smaller ring size as well.
