From what I understand, it is very important that large-breed puppies get large-breed foods. But once they are over 2 years of age, I would assume they have the same requirements as any adult dog. Since the reasons for the special puppy food have to do with growth, I don't see any reason why you couldn't give them regular adult food, but I would obviously check with the vet first.

I know there are studies on caloric intake and calcium intake during puppyhood which indicate that excess calories and calcium during growth (puppyhood) contribute to bone diseases later in life. I'm not sure what would be in a large-breed adult food that would help with joints.
