I have been grooming my schnoodle and my poodle who passes last year for about 3 years. Not perfect but he looks pretty good. All of a sudden I can't do his ears and topknot connection correctly. He has very fine hair on his head and now the sides of his topknot stick out. I can't really determine where to start with the top. I feel like I have cut too much and need to grow some of the top out to blend in. Any suggestions?

No suggestions I'm afraid, just commiseration. My poodle has really poor coat quality, so it's very soft and limp like it sounds your boy's is. He usually comes out looking pretty okay after I scissor his topknot, but it just doesn't hold its shape well so inevitably it starts looking messy and uneven after a few days, just because some bits of hair have more curl than others. Every so often I trim it down really short and let it grow out from scratch, but I'm not sure how that'll work for you. Good luck!
