My 3 year old Toller and I have started agility classes. She is doing much better then I am, but that's besides the point.
The instructor recommended an electrolyte gel. Since dogs don't sweat, I don't see how they lose electrolytes.
Any advice?

Dogs may not sweat, but they can drool up a storm when active or just on hot days (or in the case of mine, when they're looking at food). I know several people who give electrolytes when doing things like agility and tracking. Your dog, your choice.
