I'm getting a smooth collie, but the breeder had 3 coat options to pick from: rough, smooth, and classic working line farm collie (Moderate Coat). How does the last one look? I tried googling photos but didn't find anything. It sounds interesting though.

Is the breeder just talking about coat length, or do they mean the landrace type of Farm or Scotch Collie?

The Farm and/or Scotch Collies I've seen have been quite different from your typical Collies. They look like there is a goodly dash of Border Collie and/or English Shepherd, and/or Australian Shepherd somewhere along the line. They've typically been smaller than Collies, and have a coat a that is longer than an Aussie, but less than a Rough Collie, and usually not as profuse as either breed.

If she just means Collies from working lines, I'd expect a dog that looks like a typical Collie, but with a lighter, shorter coat. Kind of like an English Setter from field lines has a much shorter coat with less feathering than a show line English Setter.
