As the title says really, but in particular I am looking for papers or articles about the issue that dogs can't digest grain thing and such.

Also conditions caused by deficiencies or the excess of things in the diet.
On a self educational rampage at the moment.

I have these two books,this first one is an older book 1999 but easy to understand...ha..ha..

Even though these books are a little older and new research comes in everyday these are the two books that I have and used for years and always had wonderful results with all my dogs regarding health and nutrition.Hope this helps.I also read alot online and the www.dogfoodadvisor.com is also another great source.

This is a thesis written by a Harvard student. . .but she did a lot of research!

I'm bookmarking this for later!

I second Raw Meaty Bones. It's a quick, easy read but packed with information.

I haven't read it yet, but Unlocking the Canine Ancestral Diet has been on my wishlist for a while. I've heard some great things about it.

That paper is FASCINATING. And here I thought I knew enough about the pet food industry but clearly not. I'm forwarding it to some of my dog owning friends. And I'm also going to ask my vet for her opinion. That should be interesting.
