Thier is a difference between creole and cajun. The cajuns were basically refered to as the poor majority in louisiana, They were the original frenchmen that came over from the mainland. They were the ones that couldnt afford the extras that creoles put into thier food. Such as tomatoes and okra. Foods such as Gumbo, Jambalya and ettoufee were made dismally because the cajuns couldnt afford theose little luxerys. The creoles were the richer folks that could afford the extra spices and vegetables to add for thier cooking. But what the cajuns did do is learn to make spices from a small amount of goodies. hence the invention of the File' Gumbo.....File is dried veggies that were ground into a powder.Hence again for the song..
