You can buy agility equipment, or make your own from PVC. Poodles can do really well in agility, but I would recommend that you go visit a class. If you start teaching your Poodle things, then decide to enroll her in an agility class, you will have confused her from the beginning by not doing things correctly.
In the meantime, you can do a lot of things to increase endurance, build muscle, and enhance dexterity. For the latter, I placed a large plank across 3 cement blocks (one at each end, and one in the middle), and had my dogs walk forward, then backward, increasing the speed as we progressed. This really helps body awareness, and my male, who used to hit shoulders or his hips when going through doors too fast, is no longer my "bull in a china closet," LOL he's as graceful as a ballerina! My female can leap over the picnic table out back, clearing it by a good foot or more.
