I just found out today that my husbands' employer is sending us to an all-inclusive resort in the Poconos (yeah, a silly heart-shaped jacuzzi, mirrored ceiling place

) for a weekend for some awards dinner in a month. So being the dork that I am, my second thought (after "Woohoo!") is what to do with the dog.
Background: Beavis is about 2 years old. I've had him about a month and a half. He was found stray in April with a badly damaged eye. Spent about a month at the ASPCA in NY while recovering from his eye removal before going to a foster home for the Peke rescue. He was with the fostermom about 2-3 weeks.
He apparently had some barrier aggression at the shelter. He's shown some resource guarding for me -- bit me once (not bad - barely broke skin, bruised a lot), but growled and snapped a few other times while protecting a treat or toy. He doesn't get those particular treats or toys anymore. He behaves well, but doesn't really listen all that great, if that makes sense.
When I took him to work with me at the animal hosptial, he was great with all the other techs, but growled and barked at the vets. He behaved well in the kennel while I worked, except when one of the vets walked by, then he barked at them.
We're starting obedience training a week before this weekend getaway. He hasn't been around other dogs much since we got him. He's met my parents dog once (a 13 year old terrier mix), and they got along ok. Better than I expected, actually.
So... I'm not sure if Beavis will behave while we're away. My parents are willing to watch him, but I'm concerned that they're only used to extremely well-behaved dogs, and Beavis can be difficult. I'd feel awful if he bit one of them or their dog. And sometimes my neices and nephews come to their house, and I don't trust Beav with kids. But on the other hand, he might feel like he's back at the shelter at the kennel, and I wouldn't want him to feel abandoned. But I think kennel workers would be more used to dealing with potentially difficult dogs.
What would you do?
